Chopped Tomatoes
Heat some oil in a thick bottomed pan and gently soften the onions with garlic, rosemary & thyme. Add tomato paste, stir well coating the onion. Then add chopped tomatoes and passata, stir well and bring to simmer. Meanwhile bring salted water to the boil and cook pasta. Slice chicken breasts and gently fry until cooked and then stir into the tomato sauce. Once cooked add the pasta and spinach to sauce, stir well to coat all of the pasta and pour into bowls or serving dish. Garnish with halved tomatoes, crumbed feta and basil leaves.
